Chitlins; A Personal Memoir


My mother, Pearle, used to cook chitlins on special occasions. She would get together with Mrs. Archie and Mrs. Terry and they would get 'busy'!
Us kids couldn't stand the smell and we would leave the neighborhood, on our bicycles, and be gone for hours! 
One year, we thought we would go all the way to Scranton, PA (more than 50 miles from Binghamton, NY). We may have gotten 5 miles out of town before turning back.
When we returned, the chitlins were under control (smell gone) and our parents were well into their libations.
The collard greens, cornbread, black-eyed peas and assorted pies were ready for consumption!
